Title: Palak Tomato

Serves 5
Cooking time (approximately): 15 minutes

~Ingredients

1 bunch palak, finely chopped
10 small tomatoes
1 small ginger
1 onion, minced
2-3 green chillies
4 tbsp oil
½ cup water
3 tbsp cream for garnishing, slightly whipped
Salt to taste

~Method

Put two 2 tbsp oil in a pan.

Add the palak, ginger and green chillies and cook for five minutes. Cool and grind coarsely in a mixer.

Add half the water to the mixture and set it aside. Your gravy is ready.

Heat two tbsp of oil in the same pan. Fry the minced onion till golden brown.

Add whole tomatoes, salt and cook for seven minutes. Pour in the gravy.

Add the rest of the water to the mixture. Simmer for 10 minutes or till done.

Pour cream (slightly whipped) on top.

Serve hot with rotis.
