Mein Chow Soup Time: 15-30 mins |
Ingredients: 1 tbsp - finely chopped fresh mint leaves 1 tbsp - chopped coriander 2 tbsp - chopped garlic 2 tbsp - chopped ginger 2 tbsp - finely chopped tomato 2 tbsp - finely chopped capsicum 2 tbsp - finely chopped cauliflower 2 tbsp - finely chopped carrot 2 tbsp - finely chopped cabbage 1 tbsp - quick cooking oats ½ tsp - pepper powder 1 - green chilli, finely chopped (optional) 1 tsp - oil salt to taste
For Topping: 2 tbsp - chopped coriander
Method:
1. Heat the oil in a wok on a high flame. 2. Add the mint leaves, coriander, garlic, ginger, vegetables and salt and stir fry for 2 to 3 minutes over a high flame. 3. Add 4 cups of hot water, oats, salt and pepper powder and bring to a boil. 4. Serve hot, garnished with the coriander.
