Banana Bread


Ingredients:
2 cups Flour
1 cup Brown sugar
2 tsp Baking powder
2 Eggs, lightly beaten
? tsp ground Nutmeg
2/3 cup unsalted Butter
3 ripe Bananas, mashed

Method:
1.        Preheat the oven to 325? F.
2.        Grease and Flour an 8-cup loaf, pan, 9 x 5 x 3 inches.
3.        Sift together the flour, baking powder, nutmeg and half teaspoon Salt into a bowl.
4.        Cream the Butter and Sugar together and gradually add the eggs.
5.        Add the mashed banana and mix until well combined.
6.        Add the sifted flour and mix until smooth.
7.        Pour the mixture into the loaf pan and bake for about 45 minutes. Cover the top of the cake loosely with foil if it starts to darken too quickly.
8.        A skewer inserted into the center should come out clean.
9.        Allow to cool for 5 minutes. When completely cooled, wrap in plastic wrap until served, to keep it moist.

Chicken Rice


Ingredients:
2 tbsp Olive oil
Salt and Pepper
1 tsp Castor Sugar
1 Onion, chopped
1 tbsp Garlic puree
200 gm Basmati rice
400 ml Tomato puree
100 ml Chicken stock
1 tbsp chopped Coriander leaves
225 gm Chicken breast, chopped
? small Red Pepper, de-seeded and chopped


Method:
1.        Cook the rice according to the packet instructions.
2.        Heat the oil in a large saucepan and saut? the onion, red pepper and coriander for about 5 minutes.
3.        Add the chopped chicken and saute stirring occasionally until it turns opaque.
4.        Add tomato puree, the chicken stock, garlic pur?e and sugar and season with salt and pepper. Cook uncovered for 15 minutes.
5.        Drain the rice when cooked and mix with the tomato sauce.

Bedeviled Eggs


Ingredients:
1 tsp salt
12 boiled Eggs
? cup Mayonnaise
? tsp Chilli powder
4 tbsp Onion, diced
? tsp Tabasco sauce
2 tsp Coriander powder
1 tsp ground Fenugreek
2 tbsp chopped Coriander


Method:
1.        Slice eggs in half lengthwise and remove yolks. Set egg whites aside.
2.        In a medium bowl, use a fork to mix the yolks, mayonnaise, and tabasco together. Stir in onion, parsley, coriander, fenugreek, salt, and chilli powder.
3.        Fill a plastic bag with the yolk mixture. Cut one corner of the bag to make a small hole. Squeeze about 1 tablespoon of the filling into each egg-white half.
4.        Cover and chill until ready to serve.

Chicken and Apple Balls


Ingredients:
Plain flour
Oil for frying
? Onion, diced
2 tbsp Bread crumbs
1tbsp coriander, chopped
2 Chicken breasts, chopped
1 Apple, peeled and finely grated
? Chicken stock cube, finely crumbled


Method:
1.        Squeeze the grated apple to remove some of the liquid.
2.        Put the chicken, onion, parsley, crumbled chicken stock cube, bread crumbs, and grated apple into a food processor.
3.        Chop for a few seconds, mix in the plain flour and season lightly.
4.        Using wet hands, form into about eighteen small balls and roll in flour.
5.        Fry in shallow oil until golden and cooked through.

Eggy Bread


Ingredients:
4 tbsp Milk
2 tsp Butter
Oil for frying
4 Bread slices
2 Eggs, lightly beaten


Method:
1.        Trim the crusts off the bread.
2.        Cut the bread into about 4cm strips.
3.        Beat the egg and milk in a shallow dish and dip the bread into this mixture until coated on both sides.
4.        Melt the butter and oil in a frying pan and fry the strips of bread until golden on both sides.

Apple Chops


Ingredients:
2 tsp Butter
1 tbsp Flour
? sliced Onion
1 cup Apple juice
4 top Lamb chops


Method:
1.        Season flour with a little salt and pepper.
2.        Lightly flour lamb chops and brown on one side in butter in non-stick skillet over medium heat.
3.        Turn chops; stir in onion and apple juice; bring to a boil, lower heat, cover and simmer for 7-8 minutes.

Fish in Orange juice


Ingredients:
Butter
125 ml Orange juice
50 gm crushed Cornflakes
250 gm boneless Fish, skinned
40 gm Cheddar Cheese, grated


Method:
1.        Put the fish fillets into a dish suitable for use in a microwave.
2.        Pour over the orange juice and cover with the grated cheddar and crushed cornflakes.
3.        Dot with a little butter. Cover, leaving an air vent, and cook on full power for 4 minutes, stirring halfway through.

Stuffed French Toast


Ingredients:
Butter
2 Eggs
2 cups Milk
8 Bread slices
2 Banana, sliced
1 tsp Vanilla Essence
60 gm Cream cheese


Method:
1.        In a medium bowl, beat eggs, milk, and vanilla until blended. Set aside.
2.        Melt butter in skillet over medium heat.
3.        Make 4 cream cheese and banana sandwiches; dredge in egg mixture and cook in buttered skillet until both sides are golden brown.
4.        Repeat with each sandwich until all are made.
5.        Cut French toast into diagonals and sprinkle with powdered sugar when serving.

Mutton Burger


Ingredients:
Oil for frying
? kg minced Meat
2 tbsp Soya sauce
200 gm Red Pepper
2 tsp chopped Garlic
2 ? tbsp Peanut Butter
3 tbsp fresh Bread crumbs
100 gm roasted Cashewnuts
3 tbsp chopped Coriander leaves
2 Green Chilli, seeded and chopped

Sauce
1 tbsp Lemon juice
3 tbsp Peanut butter
60 ml Coconut cream
250 ml Chicken stock
4 tbsp sweet Chilli sauce
2 tbsp chopped Coriander leaves


Method:
1.        For the burgers, deseed and quarter the peppers. Grill until the skin blackens.
2.        Peel away skin and chop the peppers.
3.        Combine with remaining burger ingredients. Blend and shape into patties. Chill for 30 minutes.
4.        Shallow fry in hot oil until cooked through.
5.        For the sauce, combine the ingredients in a pan. Bring to a simmer while whisking until thickened. Stir in coriander.
6.        Season and serve with the burgers.

Chicken Sandwich


Ingredients:
1 tsp Ajwain
2 tbsp Honey
2 Red Pepper
1 tbsp Sirka
Salt and Pepper
1 tsp Chilli sauce
1 shredded Lettuce
1 tbsp chopped Garlic
2 tbsp Tomato ketchup
4 boneless Chicken thighs
1 tsp Worcestershire sauce
1 tbsp finely chopped Gherkins
8 slices of toasted White Bread

Avocado spread
2 tsp Lemon juice
1 tsp Chilli sauce
1 Avocado, peeled and stoned
1 tbsp chopped Coriander leaves

Chilli Onion
1 tbsp Oil
1 tbsp Butter
1 tsp grated Jaggery
2 large sliced Onions
1 tsp chopped Thyme
1 Red Chilli, finely chopped


Method:
1.        Combine chicken with ketchup, vinegar, gherkins, honey, Worcestershire sauce, chilli sauce, oregano, garlic and seasoning.
2.        Mix well and chill overnight.
3.        Grill the peppers until skin blackens and peel it away.
4.        Drain chicken from the marinade. Cook until tender.
5.        Slice the chicken when cool.
6.        For the chilli onion, heat butter and oil and cook onions until soft.
7.        Stir in remaining ingredients and cook until browned.
8.        For the avocado spread, blend ingredients until smooth.
9.        Spread over the bread. Layer up with the chicken, peppers, chilli onions and lettuce and serve.
