Ingredients:
3 Eggs Cocoa powder 125 gms Sugar 400 gms dark Chocolate 300 gms Whipping cream 250 gms pie or sweet Dough
Method:
Bring the whipping cream to a boiling point. Whisk the eggs with the sugar until pale and thick. Add the warm cream, whisking, and then the ground chocolate, which will melt slowly in the warm mix. Blend well to obtain a homogeneous mix. Ease the pie dough or sweet dough into a pie pan. Bake blind. Pour the chocolate mixture in the prebaked pie shell and bake in warm oven at 180°C or 356°F until the chocolate mixture is completely baked. When finished, let it cool and remove from the pan. To finish, sprinkle the surface of the pie with cocoa powder.
Tip: Dust raisins, chocolate chips, candied or dried fruit, and nuts with some of flour specified in recipe before adding to batter to prevent shrinking.
